Super Recipes for the Super Bowl

The big game is this weekend, and we've thrown together some of our Sherper's employees' favorite recipes to make your Super Bowl party one to remember. 

Jalapeño Popper Dip

Enjoy this dip with your favorite game-day chips, a baguette, or vegetables! 

Ingredients: 

  • 2 (8 oz) packages of cream cheese
  • 1 cup of mayonnaise 
  • 1 (4 oz) can of diced green chilies, drained
  • 1 (4 oz) can of chopped jalapeños, drained
  • 1/2 cup shredded Mexican style cheese
  • 1/2 cup shredded Mozzarella cheese
  • 1 cup Panko bread crumbs
  • 1/2 cup grated Parmesan cheese

Directions: 

  1. Preheat the oven to 375Ëš Fahrenheit 
  2. In a medium bowl, combine the cream cheese, green chilies, jalapeños, mayonnaise and shredded cheeses. Mix thoroughly until smooth and evenly combined. Spread the mixture into a baking dish (approximately 9" x 9").
  3. In a second bowl, combine the Panko breadcrumbs and Parmesan cheese; stir until combined. Spread the mixture over the cream cheese mixture, and bake 25-30 minutes.

Unfried Baked Pickles

Ingredients: 

  • Nonstick cooking spray for the cooling rack
  • 2 large eggs
  • 1/3 cup all-purpose flour
  • 1 tbsp Worcestershire sauce
  • 1 tsp hot sauce
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • Kosher salt and freshly ground black pepper
  • 1 cup Panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 (16 oz) jar sliced dill pickles
  • Ranch dressing for dipping

Directions: 

  1. Place an oven rack in the middle position and preheat the oven to broil. Spray a cooling rack with nonstick cooking spray and place it on top of a baking sheet.
  2. Whisk the eggs with the flour, Worcestershire sauce, hot sauce, chili powder, garlic powder, and a pinch of salt and pepper in a medium bowl.
  3. In a large bowl, combine the breadcrumbs and Parmesan. 
  4. Drain the pickles and pat dry with paper towels.
  5. Working in batches, toss the pickles in the egg mixture so they are fully coated. Remove the pickles, letting the excess egg drip off, and transfer to the breadcrumb mixture. Toss to fully coat. Spread the pickles out on the prepared cooling rack in a single layer.
  6. Place the baking sheet on the middle rack in the oven and broil until the tops of the pickles are a crisp golden brown, about 4 minutes. Flip the pickles and continue to cook until crisp golden brown all over, about 4 minutes.
  7. Serve with ranch dressing.

Super Nachos

Ingredients: 

  • 1 lb ground beef
  • 1 cup salsa
  • 1 (1.25 oz) package taco seasoning
  • 3/4 cup of water
  • 1 (18 oz) package restaurant-style tortilla chips
  • 1 cup shredded sharp cheddar cheese
  • 1 (15.5 oz) can refried beans
  • 1 cup sour cream
  • 1 (10 oz) can pitted black olives, drained and chopped
  • 4 green onions, diced
  • 1 (4 oz) can sliced jalapeño peppers, drained

Directions: 

  1.  Cook and stir ground beef in skillet over medium heat until meat is crumbly and no longer pink, 5 to 10 minutes. Drain excess grease. Stir in taco seasoning mix and water and simmer until beef mixture has thickened, 8 to 10 minutes.
  2. Set the oven rack about 6 inches from the heat source and preheat the broiler. Line a baking sheet with aluminum foil. 
  3. Spread tortilla chips on the prepared baking sheet; top with cheddar cheese an dot with refried brand and ground beef mixture.
  4. Broil in preheated oven until cheese is melted, watching carefully to prevent burning, 3 to 5 minutes. 
  5. Top nachos with salsa, sour cream, black olives, green onions, and jalapeño peppers.
